Banana Cake Recipe Tips

If I could only give one tip to making sure your banana cake recipe ends up tasting delicious, it is to make sure that you use very ripe bananas. By very ripe, I mean overripe. I mean throw them away bananas. The bananas should be almost black. At the very least, there should be absolutely no green on them. The bananas should at least be a dark yellow with lots of brown spots. And this goes not only for banana cake recipes, but for any bread or muffin made with bananas as well.

Every southern cook wants the ultimate banana cake recipe. I think I may have the best banana cake recipe ever, and believe me, I have tried a lot of banana cake recipes. If you love bananas, banana bread, or banana muffins, and you've never tried a banana cake, you've got to sample this banana cake recipe. It's banana heaven.

Best Banana Cake Recipe

Banana Cake Recipe Ingredients

1 1/2 cups mashed overripe bananas

2 teaspoons lemon juice

3 cups all-purpose (or cake flour for a finer, lighter texture)

1 teaspoon cinnamon

1 1/2 teaspoons baking soda

1/4 teaspoon salt

3/4 cup butter, softened

2 cups sugar

3 large eggs

2 teaspoons vanilla

1 1/2 cups buttermilk

Preheat oven to 300 degrees Fahrenheit. Mix together the mashed bananas and lemon juice. In a different bowl, mix all-purpose flour, cinnamon, baking soda, and salt. In another large bowl, cream together the butter and sugar. Beat in each egg one at a time. Add the vanilla. Alternate adding the flour mix and the buttermilk. Next, stir in the mashed banana mixture.

Pour the banana cake batter into 2 greased and floured 10 inch round cake pans. Bake for 45-60 minutes, or until a toothpick inserted into the center of the banana cake comes out clean.

Frosting for Banana Cake Recipe

Banana Cake Frosting Ingredients

1/4 cup butter, softened

8 ounces cream cheese, softened

1 1/2 cups confectioner's sugar

3/4 teaspoon vanilla

Chopped pecans, optional

Cream together the butter and cream cheese until fluffy. Add the vanilla extract. Add confectioners sugar. Beat at low speed til mixed, then on high until smooth. Spread on the cooled banana cake. Sprinkle chopped pecans on top.

Frosting Variation for Banana Cake Recipe

I have also made this banana cake recipe with no icing at all and it still tastes delicious. Or thin the banana cake frosting and drizzle it over the cake as a glaze. Chocolate frosting also tastes delicious on a banana cake. Here is a recipe for banana cake glaze frosting:

1/4 cup unsalted butter

1/4 cup milk

1 teaspoon vanilla extract

1 cup chocolate morsels or 3 tablespoons cocoa

2 cups confectioner's sugar

Mix everything together except the confectioner's sugar. Heat in a saucepan on medium heat until the morsels and butter melt. Remove from heat. Add to the confectioner's sugar. Mix well. Drizzle over the banana cake.

Banana Cake Recipe Tips for Freezing

Note: This banana cake recipe freezes very well. Simply wrap very tightly in plastic wrap or aluminum foil after it has cooled for a few minutes. After taking the banana cake out of the freezer, let it come to room temperature before unwrapping the cake for frosting. It will taste fresh and amazingly moist.
