1 1/2 cups mashed overripe bananas2 teaspoons lemon juice3 cups all-purpose (or cake flour for a finer, lighter texture)1 teaspoon cinnamon1 1/2 teaspoons baking soda1/4 teaspoon salt3/4 cup butter, softened2 cups sugar3 large eggs2 teaspoons vanilla1 1/2 cups buttermilkPreheat oven to 300 degrees Fahrenheit. Mix together the mashed bananas and lemon juice. In a different bowl, mix all-purpose flour, cinnamon, baking soda, and salt. In another large bowl, cream together the butter and sugar. Beat in each egg one at a time. Add the vanilla. Alternate adding the flour mix and the buttermilk. Next, stir in the mashed banana mixture.

Banana Cake Frosting Ingredients
1/4 cup butter, softened8 ounces cream cheese, softened1 1/2 cups confectioner's sugar3/4 teaspoon vanillaChopped pecans, optionalCream together the butter and cream cheese until fluffy. Add the vanilla extract. Add confectioners sugar. Beat at low speed til mixed, then on high until smooth. Spread on the cooled banana cake. Sprinkle chopped pecans on top.

I have also made this banana cake recipe with no icing at all and it still tastes delicious. Or thin the banana cake frosting and drizzle it over the cake as a glaze. Chocolate frosting also tastes delicious on a banana cake. Here is a recipe for banana cake glaze frosting:
1/4 cup unsalted butter1/4 cup milk1 teaspoon vanilla extract1 cup chocolate morsels or 3 tablespoons cocoa2 cups confectioner's sugarMix everything together except the confectioner's sugar. Heat in a saucepan on medium heat until the morsels and butter melt. Remove from heat. Add to the confectioner's sugar. Mix well. Drizzle over the banana cake.Banana Cake Recipe Tips for Freezing
Note: This banana cake recipe freezes very well. Simply wrap very tightly in plastic wrap or aluminum foil after it has cooled for a few minutes.
