My Quest for an Easy Recipe for Chicken Salad Sandwiches
Way, way back when I first got married and still tried to impress my husband (grin), I wanted to learn how to make chicken salad sandwiches. Not only that, but I demanded a chicken salad sandwich recipe that was easy, but also delicious.
I experimented with many chicken salad recipes over the years to get my easy chicken salad recipe just right. Finally, I hit on what I believe is the best chicken salad sandwich recipe ever. It is more than just a basic chicken salad recipe, but it has a bit of finesse. This delicious and easy chicken salad recipe will be right at home at a kids' lunch table or a bridal shower buffet. It can be simple or elegant.
I have served this chicken salad recipe many times over the years, and I have never failed to receive compliments and requests for my recipe for chicken salad. I had forgotten how much time and effort I had spent perfecting my recipe. Then, the internet came along and I realized that many cooks will use it for a cooking reference instead of traditional cookbooks. Easy Chicken Salad Sandwich Recipe
Chicken Salad Recipe Ingredients
- 3 cooked chicken breasts, chopped
- 1 or stalks celery, chopped- about 3/4 cup
- 2 green onions, chopped
- 1/2 cup seedless grapes, halved
- 3/4 cup dried cranberries
- 3/4 cup salad dressing, such as Miracle Whip brand
- 2 Tablespoons coleslaw dressing (Marzetti's is good)
- 1 teaspoon each- paprika and seasoning salt
- Coarsely ground black pepper, to taste
Simply mix everything together well. Chill for at least one hour before serving. It tastes much better if allowed to chill overnight.
Serve on toasted bread, croissants, or lettuce leaves. This easy chicken salad recipe also tastes great in pita pockets or hollowed tomato cups. Also try different breads such as Ciabatta or raisin bread.

Something I've found that's surprised me: chopped, de-seeded, de-membraned jalapenos go very well with chicken salad, especially one with green onions. The de-seeding and -membraning gets rid of the heat, and the jalapeno complements the other flavors.

Zsuzsy Bee, I'm so glad that you liked my chicken salad recipe. Actually, I plan on making some today. I really like recipes like this for the holiday season. I can just make some chicken salad, put it in the refrigerator, and everyone can eat whenever they get hungry.

Can I use any salad dressing? and forget about the cranberries? I think we do not have them over here.

Princessa, you can use mayonnaise instead of salad dressing. And yes, you can skip the cranberries. Add raisins if you wish.
Kat07, if your husband doesn't like cranberries or raisins, just leave them out. Chopped apples would be good, but not necessary.

When this is done I leave out the cranberries and once the salad is placed on the bottom half of bread I add acouple of sugar snap peas right on the top of the salad and then put on top bread piece. Yummmmmmmmmmmmmmmy addition

is it suppose to come out orange? the only seasoning salt that i could find was orange....it tasted good, but had a little spicy kick to it...is that the way it is suppose to be?

I made this recipe for my daughter's baby shower in February & it was so good. I got so many compliments & requests for the recipe. The only thing I did different was to leave out the paprika. When I made a test recipe it was very orange & the flavor was strong. In my opinion the recipe is better without it. Thank you so much for sharing your AMAZING Chicken Salad recipe.

I made this about a year ago (we loved it!) and just sat down to peruse the internet and hopefully find it again.. and here I did! It was a hit then and my husband and I are excited to try it again. It is getting bookmarked this time for sure. ;)
I have been making this for years and for those of you who are not using the cranberries are missing out. I don't like cranberries but they really add to chicken salad. I also add chopped pecans. I made it for an open house and knew that people would ask for the recipe. I made them up in advance and gave them to people who ask. Try the cranberries!!!!

This is by far the best chicken salad recipe I've ever tried! Next time I'm going to use paprika and1/2 tsp regular salt. Paprika and seasoned salt turn it alittle too orange. Great flavor!

I'm going to go against everybody here and say I didn't like it. It was way too sweet for what I would consider a normal chicken salad. Chicken salad should be mostly savory not sweet.
miguel if you use mayo it wont come out sweet...mircle whip and other salad dressing brands have more sugar added to them

This recipe looks great, I'm taking the advice of the comments and leaving out the paprika and cranberries as i think it'd ruin it for me.

Thank you for posting this. I was looking for something that I could take to a church "soup" social. I didn't want to bring a dessert like everyone else and wanted something that would pair well with different kinds of Soup. I think I am going to do them in croissants and the hollowed tomato cups just to add variety.

i tried this recipe with some slivered almonds that i just threw in a pan instead of the cranberries to add some of a crunch, very tasty.
